Paleo Banana Bread (Vegetarian & Gluten Free*)

This delicious Banana Bread recipe is gluten free and vegetarian. The recipe does usually contain eggs, but can be subsituted. I always recommend that if you do eat eggs, you get them fresh from a local farmer. If you buy eggs at the store please do your homework, or just don't do it. Cage free doesn't mean free range chickens. This could mean they live in a barn and barely see sun light or are rarely let outside. Organic doesn't mean cage free either. Supporting companies that do not take care of their animals is not only unproductive but is also unhealthy to eat the eggs or animal products that come from abused, enclosed and sickly chickens.

With that being said,here is a great egg substitute for baking: To replace one large egg, finely grind 1 tablespoon of golden flax seeds in a spice grinder. Place in a small bowl and stir in 3 tablespoons of water. Let it sit for 30 minutes before using. The mixture will have thickened slightly and feel like a loose jelly. Just before incorporating into a recipe, stir in a good pinch of baking powder. Additionally, I recommend keeping most of these ingredients in your house if you want to make other healthy, gluten free and paleo meals and treats, as they are found in many other recipes. Ingredients: - 2 Very Ripe Bananas - 1/4 cup Honey - 1/2 cup Applesauce - 1 Tbsp Coconut Oil - 1 Tsp Vanilla Extract - 2 Fresh Eggs or Flaxseed substitute - 1 cup Almond Flour - 1/3 cup Golden Flaxseed Meal - 1/2 cup Coconut Flour - 1 Tsp Lemon Juice - 1 Tsp Baking Soda - 1/2 Tsp Cinnamon - Pinch of Sea Salt - 1/2 cup Blueberries (optional) - Walnuts or Almonds for top garnish (optional) Preheat oven to 325 degrees Fahrenheit. Mash the bananas, add the honey, applesauce, coconut oil, vanilla extract and lemon juice. Then whick in the eggs. Sift in the dry ingredients and blueberries if you used them. Fold the dry into the wet until mixed. Bake in greased loaf pan (about 9" x 5") for 1 hour. Be sure to keep an eye on it. At about 45 minutes,you may need to cover with tin foil to keep from baking too dark. That's it, enjoy! *This recipe is from 'Paleo Effect'.
